It only took just over a year and countless attempts to come up with our version of KIMKIM chili crisp. It starts with the same select Korean chili peppers which are sun-dried. Then it’s combined with the most umami-packed and mouth-numbing lineup of more chili peppers, Szechuan peppercorns, cumin, onion, garlic, ginger, anchovy, mushroom and brown sugar before its blasted with hot oil until it’s perfectly crispy. You will find yourself finding any excuse to use it. Some of my favorite is on soft-scrambled eggs, stir-fry noodles, curry, fried chicken and yes even on aged cheddar.
